Aloo Samosa Recipe-Easy step by step process

Ingredients for aloo Samosa recipe
For dough making:
- Maida – 2 cup
- Carom seeds – ¼ tsp
- Salt – ½ tsp
- Ghee – ¼ cup
For Aloo(Potato) stuffing:
- Potato – 4 medium (boiled)
- Green peas – ¼ cup
- Green coriander – 2-3 tbsp
- Cumin seeds – ¼ tsp
- Coriander powder – ½ tsp
- Ginger – 1 inch piece grated
- Green chilly – 1 ( finely chopped)
- Garam masala – less then ¼ tsp
- Turmeric(Haldi) powder – less then ¼ tsp
- Mango(Amchoor) powder – less then ¼ tsp
- Red chilly(Lal Mirch) powder – less then ¼ tsp

How to make dough/outer covering
Add ghee, salt and carom seeds in maida. Mix all ingredients with hands. Add little water at a time and knead a little hard dough. For kneading this much quantity, ¾ cups of water is used. Cover the dough with a lid or cloth and keep it aside for fermenting for ½ hour. Meanwhile prepare stuffing(aloo masala) for samosas.
Stuffing for Samosa
Peel boiled potatoes and mash them finely. Take oil in a frying pan and place the pan on flame for heating. Add cumin seeds in oil and saute for while. Add chopped green chillies, grated ginger and green peas and saute for 2 minutes. Now also add coriander powder, mashed potatoes, salt, red chilly powder, mango powder, garam masala, haldi powder and green coriander leaves. Mix all ingredients properly. Stuffing is ready; take it out it in a bowl and left it for cooling so that no moisture remain.
How to make cone shape samosas
Knead the dough continuously 3-4 times until it becomes soft. Take little amount of dough, roll it. 6-7 balls can be prepared from this much quantity of dough. Take one ball and place it on rolling plane. With help of rolling pin roll it round into 8-9 inch diameter roti. Divide the roti from center into two equal halves. Keep one part in your hand and put some water on the edges of half roti with help of a finger. Fold the edges giving it open cone shape. Now, fill the stuffing in the cone, leaving ½ inch space from top. Now again apply some water all around the edges from inner side of cone. Give a folded plate at the back side and stick both the sides nicely making sure the stuffing doesn’t comes out of closed cone. Keep the prepared samosa on a plate and likewise prepare remaining.
How to fry aloo Samosas
Take refine/mustard oil in a pan and place it on flame for heating. When oil gets medium hot, add 4-5 samosas in the pan and fry them on low-medium flame until they turn golden brown in color (once samosas are dipped in oil left them for frying upto 5 mins then flip them and fry the other side for another 5 mins, this extracts moisture if present). Take out fried samosas in a plate with tissue paper. Like wise fry all .
Serve piping hot aloo samosa veg with tomato sauce, green coriander/mint chutney(sauce).
If you do not have green coriander, you can tamarind sauce as well. You can also try growing coriander in water at your kitchen and store it.
